Bailey’s Irish Cream Cupcakes

We attended a family birthday party for our friend’s 6 year old daughter. We aren’t “blood family”, but we are “Steelers” family. Same thing.

Because it was the day before St. Patrick’s Day, I made goodies using a recipe for Bailey’s Irish Cream Cupcakes.  This was for the adults – for the kids I made Spring cupcakes.

I used a green paper liner. I decorated the cupcakes as instructed, but using a #2C tip because I didn’t have a #2D tip. I then topped them with green and gold sugar sprinkles.

This makes more than 24 cupcakes worth of batter.  I used a mini muffin pan for the rest of it.  It was one squeeze of the #2C tip for the icing, and topped with silver sugar sprinkles and a dot of green sparkle gel frosting. The guests commented they liked the bite-size cupcakes even more. Less guilt, I guess. (even though they ate all of them!)
